Vegetable Fritters




  Utensils:


Medium bowl

Sharp Knife

Chopping Board

Fork

Pan

Ice-cream Scooper


Ingredients:

1 Egg

1 Zucchini

1 Carrot

1 Spring Onion

1 tbs White Flour

1/2 cup Cheddar Cheese

1 tbs Olive Oil

Chilli Flakes

Salt & Pepper


  Method:

Step 1: grate the zucchini. Using a paper towel, squeeze the excess moisture out of the zucchini.

Step 2: Grate the carrot.

Step 3: Thinly slice the spring onion.

Step 4: In a medium bowl, whisk an egg. Add the zucchini, carrot, spring onion, shredded Cheddar cheese, a pinch of chilli flakes (if using) and vegetable stock cube and stir well to combine.

Step 5: Add the plain flour, the salt and a pinch of pepper. Mix well to combine.

Step 6: Heat 1/2 tbsp of oil in a frying pan over medium heat. Fill an ice cream scoop with the mixture and drop into the pan. Flatten slightly with a fork/spatula. Fry for 2-3 minutes on each side.
