Here is the step by step guide to the stuffed capsicums we have been enjoying lately..
Need:
Frying Pan
Baking dish
Wooden spoon
Sharp knife
Chopping board
Ingredients:
500g mince meat
1tbs of crushed garlic
1 medium onion chopped
A cup of rice pre cooked
2 tbs of tomato paste
1 can of chopped tomatoes
1- 4 red capsicum halved with seeds removed
Tasty cheese
Method:
Brown the mince and add garlic..
Add the onion..
Add rice and tomato paste..
Add diced tomato..
Put the filling into the capsicum and add cheese..
Cover with foil and bake for 10 minutes or until cheese has melted..
Remove foil and bake until browned..
Enjoy!!

If you have any “stuffing” leftover why not use it on a baked potato? Bake your potato, smother with the “stuffing” leftovers and add tasty cheese, microwave until cheese is melted and the then top with avo, sour cream and spring onion.
