Caramel Macadamia Nut Tarts

Ingredients

2 sheets sweet shortcrust pastry
1 nestle top 'n' fill caramel
250 g chocolate
½ cup roughly chopped macadamia nuts

Method

1. Cut short crust pastry in squares and placing into a muffin tray creating a shell. Cook in medium heat until golden brown. 
2. Once cooled, add a dollop of melted chocolate and top with some top n’ fill caramel. 
3. Sprinkle with chopped Macadamia nut and serve.

Out and About in Melbourne..

Friday the 14th. The date on my referral to see Dr Nottle, a well known Lap Band Surgeon in Williamstown.   My friend Penny also had an appointment with her doctor at the same clinic so we decided to make our appointments around the same times and go together. Running late I left my place before 10am to get Jie to school. Then we hit the road to Port Melbourne for a homeschooling excursion with Zach to learn about Melbourne's import and exportation industry and how important it is to un in Australia.. 
After being well educated at the hub, we headed for some more educational fun at Scienceworks! This was all very exciting for Nevaeh and I as we had never been there before. There was a lot of 'WOW'ing! Check out some of the moments I captured..
We had a ball!

Later that afternoon I had my first check in with Dr Nottle about the possibility of having Lap Band surgery. While in the waiting room we got chatting with others. Their stories were quite amazing but I couldn't kick the butterflies. Once meeting the Doctor, I was suprised by his understanding and knowledge. He understood me and my weight and why I wanted to do this. He was thorough in his answer's to the many questions I asked and I'm now quite excited about my future!!

My Wednesday

Every Wednesday over the last 7 weeks I have been part taking in a community program called The Little Sponges Group encouraging mothers to come together to prepare food while their little ones are getting well looked after by the ladies of the Darley Occasional Care Center just next door. 

The group is run by Centercare and I have mentioned it before here..

Yesterday was our second last meeting and the coordinator had something extra special planned for the kids during lunch. She had brought various fresh fruit and vegetables for them to create their own lunches. The kids had so much fun using different things to create hats, and boats and silly little edible faces.

Movie Night at the Shillings.

~
 Friday night we shared dinner and movies with Mark, Penny, Zach, Ben, Jacob, Toby, Hosanna and Judea. 
It's a bit of a tradition now that we make tacos since our New Years Night together.
The boys played the X-box before dinner while the girls helped in the kitchen.
I brought Vanilla coke (my movie night must have) and some fairy floss for the kids.
The boys watched a movie in the bedroom which was put on more to keep the babies out of the lounge.
Didn't work. Who would have thought that the babies wanted to be with their mummies?

So all together we watched The Wedding Planner, then after the babies went to bed we watched French Kiss.
The kids and I stayed the night and most of Saturday.
Toby come home with us for a while to hang out with Jie helping him with a few levels on the Wii.
Nevaeh was home not even 10 minutes before this..
It seems the Shilling house has that effect on people.
I went to bed last night just after 8pm.
I was pooped!
