Fried Rice

Ingredients:
2 tbs Oil
2 1/2 cups Rice
1 Diced Onion
1 Carrot grated
1 Potato grated
tbs Crushed Garlic
a cup of Frozen Peas and Corn
5 rashers of bacon diced
3 eggs

Method:
Heat a tablespoon of rice in pot then add Rice. Stir on medium heat then add water 2cm over the rice, bring to the boil then cover and simmer.

In a wok heat oil and fry off the onion and bacon

Once browned add garlic, carrot and potato.

Once browned add peas and corn.

Stir ingredients to the side of the wok and fry 3 eggs in the middle of the wok. Scramble them until dry.

Then toss everything together.

Add rice, salt and pepper.

Serve with chicken or on its own and add soy sauce for extra flavor.
